This is a full-flavored rendition of ripasso, a Valpolicella which has been refermented on the lees of an Amarone, gaining body and complexity. Antolini's ripasso reveals the partially raisined grapes which are the starting point for Amarone. The bouquet is warm and full, dominated by cherry jam, and the palate is fleshy, generous and spicy. Pair this wine with hearty fare or cow and sheep milk cheeses accompanied by dried cherries and walnut-raisin bread.
